Risotto is a type of rice popularly eaten in the northern part of Italy. The cooking method for risotto has developed over a period of 300 years and recently has expanded to include an assortment of ingredients like goose’s liver, herbs, seafood and vegetables. For this dish, I have maintained the typical creaminess of the dish but have infused the bold and aromatic flavours of a variety of dried mushrooms.
